Palmirinha Cassava Cake Recipe

This Palmirinha cassava cake recipe is also called Palmirinha cassava bombocado. It is a consistent but soft cake, prepared with grated raw cassava. That's why what you'll find after you bake it in the oven isn't a grown and fluffy cake, but compact, moist and very tasty!

Ingredients for making Palmirinha cassava cake:

 1 kilogram of raw cassava (cassava, cassava)

 2½ cups of sugar (400 grams)

 1 cup of grated parmesan cheese

 1 cup of water (240 milliliters)

 1 cup of grated coconut (fresh or dry)

 1 glass of regular milk

 1 tablespoon of butter

 3 eggs

 1 pinch of salt

How to make Palmirinha cassava cake:

Start by peeling the cassava and grating it finely. Then place in a large bowl, cover with water and rinse.

Tip: Preheat the oven to 180ºC (medium oven).

Drain this water, place the grated manioc in a cloth (preferably bleached cloth), wrap it in the shape of a bundle and wring out as much liquid as possible. Reserve the cassava in a bowl.

Then blend all the other ingredients of this Palmirinha cassava cake recipe in a blender: sugar, cheese, water, coconut, milk, butter, eggs and salt.

Tip: If you prefer, you can substitute butter for margarine and regular milk for coconut milk.

Add the blender mixture to the squeezed cassava bowl and mix well. Pour the dough into a greased and floured rectangular or square pan and bake in the oven at 180ºC for 30-40 minutes or until golden.

Tip: In this recipe the cassava doesn't need to cook and it won't leaven either. The preparation is that simple! We recommend using a 23 x 33 cm form.
